- Oil hates water. Avoid allowing excess water from fried items to get into the oil, especially ice-covered things.
- Oil hates excessive heat. Use oils appropriate for cooked items; high-temperature items require an oil with a high smoke point. Don’t exceed the oils smoke point.
- Don’t let excess breading or spices get into hour oil. Shake breaded products to remove extra breading. Pre-breaded items should be removed from their packaging, so the excess breading in the bottom of the bag or box does not get poured into the frying oil.
- Properly filter oil after each use. This will add significant life to your oil. It is ok to reuse fry oil time after time.
- Store oil in an air-tight container.
